- Heavy cream (33%) – 70 grams
- Processed cheese – 50 grams
- Bourbon vanilla syrup – 40 grams
- Lemon zest – 10 grams
- Milk – 180 grams
- Espresso
Preparation Steps
Step 1: Make the Cheese Sauce
- In a saucepan, combine 70 grams of heavy cream and 50 grams of processed cheese.
- Add 40 grams of bourbon vanilla syrup and 10 grams of lemon zest.
- Heat the mixture on the stove, ensuring it doesn’t reach a boil. Stir until the cheese is fully melted and combined with the cream. Let the mixture simmer to allow the lemon zest to infuse its flavor.
Step 2: Prepare the Espresso
- Brew a shot of espresso. For a stronger flavor, you can use two shots.
Step 3: Assemble the Latte Cheesecake
- Filter the cheese sauce to remove the lemon zest.
- In a large cup (350 ml), pour 60 grams of the cheese sauce.
- Steam and froth 180 grams of milk to a higher temperature than usual (75-80°C) to ensure the sauce integrates well, especially if it has been refrigerated.
- Pour the steamed milk into the cheese sauce and stir well to combine.
- Pour the espresso on top of the milk mixture. Optionally, you can create latte art.
Garnish
For a fresh twist, garnish one side of the drink with strawberry powder or freeze-dried strawberries. This adds a slight acidity that balances the sweetness and creaminess of the drink.

The latte cheesecake has a rich, creamy texture similar to a cheesecake. The coffee adds a pleasant bitterness, resembling the crust of a cheesecake.
